This kohlrabi is named Konstance for a reason: it’s reliable! And it has a longer harvest time, with Konstance continuing to produce uniform flat-round globes (think grounded UFOs) that resist cracking and hold their eating quality longer than most after harvest. These long-lasting, 3-inch “bulbs” have white flesh and smooth skin that is a vibrant purple hue, which extends into the stems and leaf margins, producing a lovely leafy plant that fits beautifully into an edible landscape. The bulbs are nearly fiberless and have a crisp texture and a sweet, peppery flavorsimilar to a turnip, but milder and sweeter. A versatile vegetable, kohlrabi is good raw, roasted, or even pickled. Kohlrabi greens are also nutritious and delicious, especially when young and tender, and can be used much like spinach.
