Amsterdam Carrot. Heirloom vegetable. One of the best choices for forcing outdoors or under cloches, Amsterdam Forcing is one of the earliest carrot varieties to mature. Theyre bred for use as baby carrots (i.e. finger carrots) and taste especially sweet and tender when picked young. Virtually coreless, the roots are uniform, cylindrical and slim and perform well fresh or frozen.
