Tomatillo Salsa Recipe

Ingredients :

• 500 g of tomatillos from the Gaia seed company
• 1 medium onion, chopped
• 2 cloves garlic, chopped
• 1 jalapeo pepper (or pepper of your choice), chopped
• 1/4 cup fresh cilantro, chopped
• Juice of 1 lime
• Salt and pepper to taste

Instructions :

1. Preparing the tomatillos : Remove the husks and wash the tomatillos to remove the sticky resin. Cut them into quarters.
2. Cooking the tomatillos : Place the tomatillos in a saucepan with a little water and cook over medium heat until tender and lightly browned (about 10 minutes).
3. Blending : In a blender, add the cooked tomatillos, onion, garlic, jalapeo, and cilantro. Blend until smooth or slightly thick, depending on your preference.
4. Seasoning : Add lime juice, salt and pepper, then mix well.
5. Refrigeration : Transfer the salsa to a bowl and refrigerate for at least an hour to allow the flavors to blend.
